mint and radish salad





Grab two handfuls of mint and radish, and whatever seasonal green is at your local market. Wash and toss, and mix with washed mint leaves and sliced radish (heads and tails removed.) Drizzle olive oil, balsamic vinegar, and a dash of Italian herbs, sugar and salt/pepper. Mix in juice of one lime and toss in a large bowl.

I've added edamame, arugula and sriracha peas to my version. I didn't get a chance to grab a red onion or cilantro but both would certainly add to the flavor and texture. Feel free to get creative - this is an easy yet unique salad that allows lots of improvisation!
